Thai Phi, owner of Pink Bellies, started the restaurant as a food truck in downtown Charleston in 2014. It opened to massive success, garnering such awards as Eater’s Hottest Food Trucks in America, Zagat 30 under 30 Charleston, Southern Living’s South’s Best Food Trucks, Daily Meal’s Top 10 Food Trucks in America. The secret to Thai's success and his critically-acclaimed Vietnamese food is that he blends traditional Vietnamese food with modern cooking techniques, while keeping his ingredients fresh and local. His inspiration stems from his family's immigration from Vietnam to America, growing up in both California and South Carolina, the bountiful ingredients provided by the soil of the Lowcountry, and the beauty in everyday life.
