Our food is inspired by our grandma’s homecooking in Saigon – always made with the freshest ingredients and cooked with the utmost love and care. Our menu ranges from Vietnamese classics like thit kho trung and cai chua to a fun and heightened rendition of pho with roasted bone marrow to Vietnamese American garlic noodles with pulled pork and pickled red onions.
Thai’s family is from Saigon and came to America in 1990. By bus, foot, and boat, Thai’s family crossed through Cambodia and reached an island off the coast of Thailand. From there, Thai was born in a refugee camp in Chon Buri, Thailand. He graduated from the College of Charleston with an MBA and has an extreme passion for sharing Vietnamese food with Charleston, SC.
Thai Phi, owner and chef of Pink Bellies, started the restaurant as a food truck in downtown Charleston in 2014. It opened to massive success, garnering awards such as Eater’s Hottest Food Trucks in America, Zagat 30 under 30 Charleston, Southern Living’s South’s Best Food Trucks, and Daily Meal’s Top 10 Food Trucks in America for consecutive years.
